Indian cottage cheese, made by curdling fresh milk with lemon. It has a mild flavour and works brilliantly with Indian spices, resulting in some of the best vegetarian food India has to offer.
Much loved all over the subcontinent, and can be found in almost every restaurant in the form of one of these two dishes : Palak Paneer and Paneer Butter Masala. Another favourite is Paneer Tikkas, which consists of marinated pieces of cottage cheese skewered onto a metal rod and then smoke-roasted in a tandoor.
